Dory Fish Fillet (or any preferred fish)
Steam fish alongside with broccoli, corn, tomatoes and carrots ( any preferred vegetables) till tender (approx. 15 minutes). Set aside.

Ingredients for Tomato Basil Sauce:

2 tsp olive oil
2 shallots (minced) or
2 tbsp chopped green onions
4 garlic cloves (minced)
2 cups peeled and seeded tomatoes (chopped)
1/2 cup dry white wine
1 cup chicken broth
4 tsp cornstarch
2 tbsp basil (snipped)

In a medium saucepan, cook 2 minced shallots or 2 tablespoons of chopped green onions in 2 teaspoons of olive oil until tender. Stir in 1/2 cup dry white wine. Heat to boiling; then reduce heat. Boil gently, uncovered, for about 5 minutes or until mixture reduced by half.

Stir in 1 cup of chicken broth. Heat to boiling. Stir in 2 cups chopped, peeled and seeded tomatoes and 4 minced cloves of garlic. Return to boiling; reduce heat. Simmer the sauce uncovered, for 10 minutes.

Combine 2 tablespoons of water and 4 teaspoons of cornstarch. Stir into the sauce mixture. Cook and stir until thickened and bubbly; cook and stir for 2 minutes more. Stir in 2 tablespoons of snipped fresh basil. Season to taste with salt and black pepper. Pour sauce over steamed fish fillet and serve while sauce is hot.

Looks good but after doing some gruesome research I did on “The Man who ate his Lover”, I think I will stay off meat especially pork, olive oil and garlic for a while, I’ll stick with the shitake mushroom …:P
